Ingredients:
- 2 cup winter melon chopped
- 2 tbsp Oil (olive oil, coconut oil)
- 1 cup chopped onion, garlic
- 1 cup lentils (optional during flare-up)
- 1 cup tofu
- 2 cups water / broth
- 1 tbsp turmeric/salt/pepper/ginger
Directions:
1. Chop onions and winter melon into desired size.
2. Heat oil in your pot until hot and add in onions and stir until it caramelize (~5mins)
3. Add water or broth to the onions along with winter melon and lentils.
4. Bring pot to boil, add turmeric, salt, pepper and simmer for 30mins.
5. Add in tofu and simmer for 10mins.
